Serves Two

Ingredients:
- Three Eggs
- 3/4 cup Flour
- 3/4 cup Milk
- Safflower Oil
Yorkshire pudding is traditionally served with a roast, cooked underneath it to catch the drippings from the meat. That’s gross, though, so I serve it as a breakfast dish with butter and maple syrup.
There’s a specialized pan that is absolutely worth using, but muffin tin will work as well.
To start, drizzle just enough safflower oil into each of the pan’s wells to cover the bottom of each well. Put the pan into a convection oven set to 410F while it preheats – you want the oil to be hot once the oven is at temperature.
Mix the eggs, milk, and flour into a thin batter. When the oven is preheated, pour the batter into each of the wells.
Put it back into the oven for 20 minutes. It will puff up as it cooks and will be finished once it’s lightly browned.
Allergens
- Egg — three eggs.
- Milk (dairy) — the milk (plus the butter, if served as suggested).
- Gluten / wheat — the flour.
This dish is vegetarian. It is otherwise free of nuts, soy, shellfish, and fish.
Nutrition
Estimated for 2 servings. Assumes 2% milk, all-purpose flour, and about 1 tablespoon of safflower oil total (the recipe calls for “just enough to cover the bottom of each well,” so this is approximate). The “with butter & syrup” column adds a pancake-style serving of 1 tablespoon butter and 2 tablespoons maple syrup per serving.

Most of the carbs in the plain pudding come from the flour, and the fat is split between the eggs, milk, and oil. The butter and maple syrup add roughly 205 calories per serving, mostly fat (butter) and sugar (syrup).
